Recipe Wednesday – Spring Rolls With Peanut Sauce by Penni Shelton

I really admire Penni Shelton of Raw Food Rehab, who changed her diet pretty much overnight to raw and has written several books and is currently in real estate with her husband as well as running her Raw food website.  She is my friend on Facebook and I think she is the kindest southern woman who has a lot of attention paid to her not only because of her great business appeal but she has this pretty red hair and beautiful blue eyes to match.

Spring Rolls with Peanut Sauce by Penni Shelton of Raw Food Cleanse  p. 95

For the Spring Rolls:

Rice paper
Sprouts
Carrots – julienned
Fresh mint leaves
Avocado slices

For the peanut sauce:

1/2 c   organic peanut or almond butter
1/4 c   water
1 TB   fresh lemon juice
2 t      agave nectar
2 t      nama shoyu
1/2 t   crushed garlic
1/4 t    grated ginger
Dash of cayenne
Pinch of salt

To make the peanut sauce, put all ingredients in a blender and combine until creamy.  To make the spring rolls, follow package directions for using rice paper.  Layer ingredients in desired amounts and close up roll.  (If you’ve never used rice paper before, you can find helpful video instructions on YouTube).
