A lot of us health coaches are Paleo. We see the benefit in low carb, meats and vegetables, no dairy or processed foods. Here is a nice recipe for breakfast. It can be made the night before and heated up in the morning. All of us like something quick but we want it to be packed with protein and sweet potatoes contain anthocyanins—primarily peonidins and cyanidins— and have important properties and anti-inflammatory properties. Particularly when passing through our digestive tract, they may be able to lower the potential health risk posed by heavy metals and oxygen radicals.
PURPLE SWEET POTATO STEGOSAURUS PLATES & BREAKFAST SANDWICH from Three Diets One Dinner
What? This is a recipe for some yummy crispy roasted sweet potatoes that happen to look like dinosaur plates. When I was slicing the potatoes in circles, the thing kept rolling around so I cut a horizontal sliver off the bottom to stabilize it on the cutting board. This created the stegosaurus plate shape. As if the color purple wasn’t incentive enough for my four-year old to eat this nutrient rich side dish, the added appeal of eating a “dinosaur plate” was enough to have to cut him off from eating too many. Any time you can bring some fun into healthy food, do it for your kids. They love using their imaginations in the kitchen and it might introduce them to foods they might otherwise never try.
You could make these with any color potato, but purple is definitely the most fun.
Preheat the oven to 450º. Place a wire drying rack over a large cookie sheet. In a small bowl, combine the spices: paprika, cumin, garlic powder and salt. In a large bowl toss the potato slices with the olive oil to coat. Sprinkle spices over potatoes and stir to coat. Arrange potato slices in a single layer on the prepared rack atop the baking sheet. Bake for 30-40 minutes until they are nice and crispy. Sprinkle with more salt, to taste, immediately after removing them from the oven. These are fun to pick up and eat with your hands. I’d even bet you could use these in lieu of sandwich bread!
Update: You most certainly CAN use this as bread. I made this delicious breakfast sandwich with steggy plates, canadian bacon and scrambled eggs.
